What is Monjayaki?
Monjayaki is a dish in which flour is dissolved in a lot of water, seasoned with Worcestershire sauce, etc., to make a dough, and then baked on an iron plate with ingredients such as cabbage, fried balls, and cut squid.
It originated in Tokyo. It looks similar to okonomiyaki, which originated in Osaka, but Monjayaki has a longer history, and okonomiyaki is a food derived from it which was transmitted from Tokyo to Osaka.
How to make Monjayaki?
First, make a dough by dissolving the flour in plenty of water and seasoning it with Worcestershire sauce.
Next, add cabbage and squid to the dough. (The ingredients can vary, such as mochi, cheese, fish eggs, pork, shrimp, and fried noodles.)
Once the ingredients have been sufficiently blended into the dough, it is time to bake on an iron plate.
Tips
The dough of "Monjayaki" is watery, so if you put it on an iron plate as it is, the dough will spread, so make a donut-shaped bank with ingredients in advance, put the dough in it, and bake it.
As it cooks, the moisture in the dough inside evaporates and burns, so stir it with the surrounding banks and bake the whole thing.
How to eat Monjayaki?
Eat little by little using a spatula from the outside of the dough. In order to eat Monjayaki deliciously, press the outer dough against an iron plate with a spatula and burn it. The crispy dough has a good flavour and texture, and it is a real pleasure.
